 OPERATION OF OVEN THERMOSTATS
 In addition to its primary function (the automatic regulation 
              of oven temperature) the oven thermostat may serve as the broil 
              unit On-Off switch and as the switch for manual or automatic preheat. 
              In broiling, the oven thermostat does not normally cycle. The broiling 
              temperature is determined by the distance between the. Food and 
              the broil unit rather than by the thermostat setting. The oven thermostat 
              also serves as an over-temperature protective device. There are 
              a number of baking operations which require the oven to have a specified 
              temperature before the food is placed in the oven. Manual preheat 
              and automatic preheat are provisions within the thermostat which 
              allow the oven to be brought up to the desired temperature more 
              quickly by using both the top heat from the broil unit and the bottom 
              heat from the bake unit during the heat-up period. Manual preheat 
              is used when the oven thermostat must be manually switched from 
              preheat to bake before the food is placed in the oven; an automatic 
              preheat thermostat will switch from preheat to bake when the oven 
              temperature reaches the temperature set on the thermostat dial. 
              "Preheat" saves time and is used for all cooking operations 
              except those for cooking from a cold oven start. The three types 
              of thermostats generally installed on ranges are the Hart, the Wilcolator, 
              and the Robertshaw.
 Oven Pilot Lights. On ranges using the Hart thermostat, 
              one pilot light is used to indicate that either a baking or broiling 
              operation is going on in the oven. In a baking operation, this pilot 
              light cycles On and Off in conjunction with the bake unit, and it 
              is always On during a broiling operation because the broil unit 
              does not normally cycle during broiling. Some ranges use separate 
              pilot lights to indicate the baking and broiling operations. The 
              bake pilot light cycles On and 09 in conjunction with the bake unit. 
              The broil pilot light is On during broiling and also is On with 
              the bake pilot light during an automatic preheat period.
